Thanksgiving Side Dishes!
Classic Mashed Potatoes If you are looking for which potatoes to use for the best mashed potatoes—try our Carola or Purple Viking potatoes. Both are creamy and fluffy and excellent for mashed potatoes.
**For Sweet Potato Casserole the Georgia Jet are the perfect classic choice, this year we might try the Okinawan for a fun purple version!
Roasted Winter Squash--Kabocha, butternut, honey nut, delicata, etc. Choose your favorite winter squash and slice into wedges or half moon. Coat with olive oil, salt and pepper and roast at 375 or 400 degrees until cooked through and starting to brown on edges. Then top with fresh herbs if desired and serve.
Roasted Carrots: If the carrots are small we like to roast them whole with olive oil, salt and pepper. If the carrots are large we like to cut them into chunks and roast them with cipollini onions and sweet peppers
Summer Squash Casserole: Zucchini Summer squash is a great, healthy side dish on Thanksgiving--roasted or sauteed. Below is a link to a really easy zucchini casserole.
Baked Zucchini: Zucchini tossed in olive oil, baked and topped with herbs and parmesan
Sweet Potato Medley: We like to cook our sweet potatoes (some of every color) whole and cook them about 80% through and take them out. Let them cool and cut them into cubes, coat with olive oil, salt and peppers. Then place back into the oven at 400 degrees for 10-15 minutes or until starting to crisp up on the outsides. Once crispy take them out and serve as is or mix in a bowl with fresh parsley, mint, rosemary, walnuts, and honey.
