Sometimes called Cranberry beans, Borlotti beans are a popular addition to many Mediterranean cuisines. These beans are great in salads and stews. Most often they are sold dry, but fresh borlotti beans don't require the overnight soak. Boil the fresh beans for 35-35 minutes (or pressure cook). When cooked these beans have a creamy texture and very rich, nutty and slightly sweet flavor.
